Tasting, Not Cooking

I’ll be leaving the house in about an hour.  Is this finally the first day of training at Hibiscus Oakland after a few months of waiting?  Of course, I’m a little nervous.  I’ve only met Chef and Omar White and one gentleman who was doing some construction in the dining room at the time.  …

I wrote the above before leaving for work in Oakland, and then part of me said to just wait until it’s all done before finishing the post about today’s meeting.

I arrived with my knives, chef’s coat, etc. only to be pleasantly surprised to hear, ‘You won’t be cooking tonight but tasting the menu.’  So, I followed my orders and sat down next to another man and a woman who I learned will also be part of the kitchen staff.  After the FOH staff came over to our table and to the ones behind us, the first dish of sweet toy box tomatoes with housemade queso, mache, and toast points came out.  It and everything that followed won me over.

I’ll write more about tonight, but I have to see my fridge about a drink.

Great first day.
